Ingredients
4 small sweet potatoes
1/2 cup feta cheese
1 Tbsp. butter or coconut oil
1 tsp. Mediterranean Greek Seasoning Blend
1 medium tomato, diced*
Fresh parsley, chopped
Instructions
Preheat oven to 400°F. With a fork, pierce sweet potato skin 5-6 times. Place on a baking sheet lined with foil. Bake until tender, 45 minutes to 1 hour. Halve the potatoes lengthwise. Scoop out flesh into a large bowl, leaving shells of about 1/4" thickness. Mash sweet potatoes with butter, Mediterranean Greek Seasoning Blend and ½ of the feta cheese. Place mashed sweet potato back in the shells, top with remaining cheese and diced tomatoes. Heat for 10 minutes and serve.
*Spice up your sweet potatoes by substituting fresh tomatoes with 1/3 cup Peach & Mango Habanero Salsa.
